Cream tarts

Some weeks ago I was invited to a house warming party and was asked to bring a salad or a dessert. I’ve decided to bring a dessert. An absolutely perfect choice, because most have brought a salad. Therefore my cupcakes were an absolute highlight. Actually, I ‘m sure that they would be a highlight at any time.
I’ve prepared the ingredients already at home and then just finished them there, so they were not soggy.
Everything was eaten completely and with lots of compliments.

Preheat the oven at 350°F. Knead the flour, cold butter, icing sugar, egg yolk and a pinch of salt together to a short pastry. Mould the dough to a roll with a diameter of 2 inches, wrap it in clear film and put it in the fridge for 30 minutes.

Cut the roll in 10 pieces, roll them, coat the tart tins it and bake them for 10-15 minutes. Allow the tarts to cool down a bit and separate the tarts from the tins gently. Heat the cream together with the vanilla. Solve the chocolate in the cream and let the mixture cool down. Remove the vanilla bean and mix the chocolate bulk with the mascarpone and the cests of two lemons.

Fill the tarts with the mousse and cube the strawberries. Decorate the tarts with the strawberries, blueberries and some mint. Now just scatter some icing sugar over the cream tarts and you’re done.

Ingredients

DOUGH:

  • 5,5 oz flour
  • 3 oz cold butter
  • 1,8 oz icing sugar
  • 1 egg yolk
  • 1 pinch of salt

TOPPING:

  • 9 oz mascarpone
  • 3,5 oz white chocolate
  • 1,5 fl.oz cream
  • 2 lemons
  • 1 vanilla bean
  • 20 strawberries
  • 20 blueberries
  • 10 mint leaves

Instructions
