Portuguese fairy cakes

Today I am culinary again in another European country. In Portugal. I’ve never been there, but it should be quite beautiful there. I certainly can not tell you if you can find these tartlets in Portugal, like I serve them. But they’re delicious especially with the chocolate sauce and the cherry compote. A perfect base for shopping or to pick cherries themselves. Go to the countryside make a nice walk and pick a handful of cherries. Of course, only where it is permitted :-) And not forget to snack a few during the picking. Back to the tarts that taste delicious even without the topping. But I prefer them with the cherries because I really like fruits.

Preheat the oven at 200°C. Unroll the puff pastry, scatter it with cinnamon an roll it up again. Cut the roll into six pieces and place them on a muffin sheet.

Portugiesische-Törtchen-1Form little tarts with your fingers and bake them for 8 minutes at half hight.

Meantime mix the curd with the egg, the rubbing of one lemon, the sugar and the pulp of half a vanilla. Remove the sheet from the oven and squeeze the dough to a little pan. Fill the tart with the curd mixture and again bake them for 8 minutes.

For the compote core the cherries and boil them together with the water, sugar and the vanilla husk for about 10 minutes. For the chocolate sauce carefully warm the cream with the butter and the chocolate until it is melted.

Remove the fairy cakes from the oven and let them cool down a bit. Give the sauce over the tart and garnish them with the compote.

Zutaten

cakes:

  • 1 role puff pastry
  • 2 tsp cinnamon
  • 9 oz curd
  • 2 eggs
  • 1 vanilla bean
  • 2 tbsp sugar
  • lemons

topping:

  • 7 oz cherries
  • 2 tbsp sugar
  • 4 tbsp water
  • 11 oz chocolate
  • 10 fl.oz. whipping cream
  • 2 tsp butter

Anleitungen

  1. Preheat the oven at 390°F.
  2. Unroll the puff pastry, scatter it with cinnamon an roll it up again.

  5. Meantime mix the curd with the egg, teh rubbing of two lemon, the sugar and the pulp of a vanilla.
  6. Remove the sheet from the oven and squeeze the dough to a little pan.
  7. Fill the Tartes with the curd mixture and again bake them for 8 minutes.
  8. For the compote core the cherries and boil them together with the water, sugar and the vanilla husk from point 5 for about 10 minutes.
  9. For the chocolate sauce carefully warm the cream with the butter and the chocolate until it is melted.
  10. Remove the fairy cakes from the oven and let them cool down a bit.
  11. Give the sauce over the tart and garnish them with the compote.
