When I enjoy the sunshine of spring on my belly, I rather prefer a light meal, than a hearty roast. For that case, sushi comes just right.

Everybody well knows sushi. But definitly not in this form. What happens if sushi, wrap and pancakes meet? Panecakesushi!!!

This is actually quite easy to explain, the pancakes replaces the algae, the filling is placed and then just rolle it up. Simply Sushi.

The rice is omitted and instead other goodies come into play.

First of all, the pancakes are made. Simply mix flour, milk, eggs, cress and a pinch of salt with a whisk, there`s the dough. Now only heat butter and oil (equal parts) in a pan and bake the dough into 4 pancakes.


What`s missing  is the filling of my Sushi-Pancake-Wrap combination.


First of all there is the horseradish cream cheese mixture. Just mix butter with cream cheese, horseradish and a pinch of salt. Once the cream is spread on the pancakes I decided to make a fish and a meat version. Place the swept pancakes on a plastic wrap.

For the meat version place the Roast Beef and the avocado slices on the swept pancakes. For the fish version primarily place the slices of smoked salmon, then top it with dill on the one half of the pancake and caviar on the other.

Last but not least the sushi has to be rolled. Use the plastic wrap to pull it tight. Store the rolls in the fridge for 2 hours and cut it into small pieces, just like sushi.


Soy sauce fits this sushi version rather less, so I would recommend a yoghurt mustard sauce. Mix yoghurt, mustard and lemon juice, as you like and the Pancakesushi is ready to dip.

Not a big effort, but it’s leading to a light summer snack. The measurements for this snack are showed in the first two pictures.

  • 2 eggs
  • 1 handful cress
  • 7 fl.oz milk
  • 1/2 cup flour
  • 1/2 avocado
  • 4 slices roast beef
  • 4 slices smoked salmon
  • 4 sprigs dill
  • 2 tsp horseradish
  • 1/8 cup butter
  • 2 tsp caviar
  • 2 tbsp cream cheese
  • 1 pinch salt


  1. For the pancakes mix eggs, milk, flour, cress and a pinch of salt.
  2. make 4 pancakes from the dough.
  3. For the creme mix horseradish and creme cheese and spread it on the 4 pancakes.
  4. For the first version garnish two pancakes with roastbeef and avocado slices.
  5. For the second version garnish two pancakes with smokes salmon dill and caviar.
  6. Roll up the pancakes and store them in the fridge for a few hours.
  7. Slice them up.
