Chocolate marshmallow cake

Certainly one of my loveliest childhood memories that I can connect with food is this chocolate marshmallow cake. Simply tastes like children’s birthday party. Hmmmm ….
Whether my brother or me, no matter who’s birthday could be glad to eat this cake, my favorite cake. My mom mixed these sweet mandarins from the can into the cream instead of currants, which I use. That’s pretty tasty as these small chambers spread in cake and almost burst in the mouth and the sweet freshness reveal. In my version I replace them with currants, which are all from my garden.
I think that’s really great, because you know where they’re from and also I am always happy when I walk through the garden and can reap something homegrown. Currants and blackberries are the only berries that have a chance to get into my freezer because I’ve quite a lot of them in my garden.
And that’s why I could thaw them today and pimp my cake.

Preheat the oven at 350°F. Separate the eggs and batter the yolk with the sugar. Slip the liquid butter in while slight stirring and add the cocoa powder. Add the flour and the baking powder and stir till you get a smooth dough. If the dough is to solid add some milk (1-3 tsp) and stir again. Meanwhile whisk the egg white till it’s stiff with a pinch of salt and gently fold it in the dough. Cover the bottom of a 8 inch baking pan with baking paper and pour in the dough. Even the dough and bake it for 40-45 minutes at mid-height. Remove the baking pan from the oven, let it cool down and divide it into three flan cases. For the cream mix mascarpone, curd and the chocolate marshmallows (without the cookie bottoms) and let it cool. Spread some cream on the bottom flan case and add one third of the currants.

Place the second flan case on it and follow the same process. Place the last flan case on it and either spread the remaining cream on top or cover the whole cake with the cream. Now just decorate the cake with the berries and you’re done.

Zutaten

Biskuit:

  • 3,5 oz butter
  • 3 eggs
  • 3,5 oz sugar
  • 4 oz flour
  • 1 tsp baking powder
  • 4 tsp cocoa powder

Cream:

  • 9 oz mascarpone
  • 14 oz curd
  • 9 chocolate marshmallows one box

Topping:

  • 5 oz currants
  • 10 small strawberries
  • 10 raspberries
  • 10 blackberries

Anleitungen
